This is a hard one for me because I love them all the way through the season. However, I picked the second half of season one because there was so much development to their relationship.

Bloodlines is important for showing that they can have fun together.
Children of the Dawned is important because it shows how they have love/hate relationship and it also helped for epic scenes in later episodes as Elena felt guilty for lying to him and began to understand him, but not agree with the methods Damon chooses to deal with situations.

Well this is what comes to mind at the moment, although every Delena scene is unique and special in it's own way.
